Despite his young age, he has over a decade of experience in Italian, European, and international kitchens. Even as his career reached new heights working in prestigious New York, Luigi's desire was to return to his homeland to cook for his own people.

Maitre
With over 10 years in the hospitality industry—first in the United Kingdom and then in the high-end hotel sector of Fasano—his extensive experience, both in the dining room and behind the bar, makes him the perfect maître d'. His mission? To coordinate service with the highest quality standards.

Vito Fasano

Manager
He has worked as a commis de salle, chef de rang, and finally as maître d' and international sommelier. Too French? Let’s keep it simple: in over 10 years of experience, he has learned from the best in the industry, taking on roles of responsibility in prestigious hotels. At Ardecuore, he oversees the wine selection and corporate coordination.

Pietro, Luigi, and Vito have decided to share all their experience and love for this work. Together, they pursue a big dream: to share their passion for fine wines and good cuisine in Fasano, where they were born and raised, with the guests of Ardecuore. Remembering their faces, anticipating their desires, and welcoming them into a unique place like Ardecuore.

Our Philosophy

The contemporary trattoria Ardecuore combines the traditions of rustic cuisine with culinary innovation, reinterpreting its flavors and preparations.

We want to enjoy blending research and tradition, modernity and history, ideas and ingredients. Creating a special atmosphere where it’s easy to enjoy good company and be carried away.

The menu follows the seasons and is crafted with respect for local culinary tradition: pasta is strictly handmade, and vegetables are exclusively seasonal. High-quality cheeses and cured meats come solely from Puglian farms and producers, as do the wines on our list.
